  • 1 Canada goose breast - can substitute with any waterfowl breast or wild turkey
  • ¼ Cup ground coffee
  • 1 Tsp Salt
  • 1 Tsp black pepper
  • 1 Tsp taco seasoning
  • 1 Bag of your favorite tortilla chips
  • 4 Cups Monterey jack or medium cheddar cheese - grated
  • 1 Cup black beans
  • 1 Jalapeño - diced
  • ½ of 1 bell pepper - diced
  • ¼ of a Spanish onion - diced
  • 2 Tbsp green or black olives - sliced into threes
  • ¼ Cup parsley - chopped

Instructions

  1. Heat BBQ or pellet grill to 400F
  2. Heat convection oven to 400F
  3. In a small bowl, mix together coffee, salt, pepper and taco seasoning
  4. Rub the seasoning mix all over all sides of the goose breast.
  5. Add goose breast to grill. Searing for 2 minutes on each side, then cooking for about 2 minutes more per side or until they are 120F internal. Once the goose is done, pull it off and let rest for 5 minutes.
  6. While the meat is resting, line a large baking sheet with parchment paper and add your tortilla chips.
  7. Rinse the beans.
  8. Add the cheese on top of the chips first, then the beans and vegetables. Do not add the parsley yet.
  9. Bake the nachos in the oven for about 10 minutes or until you see the cheese starting to brown.
  10. Slice the goose breast against the grain, chop into bite sized pieces and add on top of the cooked nachos.
  11. Garnish with the parsley
  12. Enjoy!
