Honey Soy Braised Goose Legs

This recipe is for everyone who doesn't take out the legs after a goose hunt. I promise, this will be your new favorite way to prepare Canada geese!

  • 2 Lbs Canada goose legs
  • ½ cup Worcestershire
  • ½ cup soy sauce
  • 2 tsp salt
  • ¼ cup brown sugar
  • ¼ cup honey
  • 4 tsp black pepper
  • 4 tsp red pepper or chilli flakes
  • 1 tsp apple cider vinegar
  • ½ of a yellow onion - thickly diced
  • 3 stalks celery - chopped

Instructions

  1. Preheat oven to 325F.
  2. Heat a large dutch oven on high on your stovetop with 2 tbsp of olive oil.
  3. Working in batches, add in the goose legs to brown all sides. approx. 8 minutes each batch.
  4. Once browned, moved onto a pan to rest.
  5. Sauté the onions in the dutch oven until translucent.
  6. Mix all of the liquids and spices together.
  7. Add in half of the liquid mixture to the dutch oven to deglaze the pan, removing all crispy bits off of the bottom.
  8. Add in the remaining liquid mixture + the celery & meat. Add water if needed to fully cover the meat in liquid. Bring to a boil.
  9. Cover with lid and add into the oven for 5 hours. Make sure to stir every hour.
  10. For the sauce, take 2 cups of the braising liquid and add to a sauce pan. Mix 1/2 a tbsp of corn starch into a small bowl with enough water to dissolve the powder, then add to the liquid. Stir until slightly thickened and pour over top of the meat.
  11. Once the meat is fall off the bone tender, you are ready to eat! Pair with any side and salad you like and enjoy. Sweet potato fries and a kale caesar salad are my favorite to pair with this meal. Drink some red wine with this and you have a restaurant quality meal to enjoy at home!
