Sweet & Spicy Goose Jerky

Just shot a limit of Canada's? Here's a great way to cook up some meat in bulk and have amazing blind snacks for the rest of the season.

  • 2 Lbs Canada goose breast
  • ½ Cup worcestershire
  • ½ Cup soy Sauce
  • 2 tsp salt
  • ¼ Cup brown sugar
  • ¼ cup honey
  • 4 tsp black pepper
  • 4 tsp red pepper or chilli flakes

Instructions

  1. After your hunt, clean off the meat of any feathers and place into a large bowl.
  2. Add in 4 tablespoons of kosher salt + enough water to cover the meat. Put into fridge overnight.
  3. Drain the water and slice the breasts into consistent 1/4" thick strips. Cut against the grain for a more tender jerky or with the grain for a more chewy piece.
  4. Mix all of the ingredients together in a separate bowl and then add into the bowl of sliced meat.
  5. Cover and put into the fridge for 4-24 hours. The longer the better!
  6. Preheat your smoker to 160F.
  7. Lay the strips onto your smoker grill grates and cook for 2-4 hours until your desired texture is reached.
  8. Pull off of the grill, let cool and enjoy the best blind snacks possible for the rest of the season!
